\nServes 4-6 people<\/p>\n
\n300g farro
\n60g currants
\n\u00bd small red onion, finely chopped
\n1 bunch of fresh Italian parsley, thinly sliced
\n20 leaves of fresh mint, thinly sliced
\nJuice of 2 lemons
\n2 tablespoons extra virgin olive oil
\n60g sliced almonds, lightly toasted (place on a tray in a medium oven for couple of minutes to toast)
\n1 medium red chilli finely chopped, seeds removed<\/p>\n
\nSimmer the farro in unsalted water for about 20-25 minutes or until the farro is just cooked.
\nDrain and allow to cool.
\nOnce cooled, add the farro to a large bowl with all of the other ingredients and mix together. Season with salt and freshly ground black pepper, transfer to a serving bowl and serve.<\/p>\n
