Here we have a favourite of Francesca’<\/span><\/a>s that Belinda (co-owner) and James (Executive Chef and co-owner) sent us.
\nFarro can be bought from The Mediterranean Market in Queenstown<\/span><\/a> and Wanaka<\/span><\/a>.<\/p>\n

“This farro salad is a great dish because it is easy to make but is absolutely delicious. It goes very well with grilled fish or chicken and would be a lovely Spring dish if you wanted to use this a little later in the year.
\nFarro is an ancient grain similar to bulghur wheat and has been used by the Italians for years.” (Belinda)<\/p>\n

Francesca\u2019s Italian Kitchen\u2019s Farro salad\u00a0<\/span>
\nServes 4-6 people<\/p>\n

Ingredients<\/strong>
\n300g farro
\n60g currants
\n\u00bd small red onion, finely chopped
\n1 bunch of fresh Italian parsley, thinly sliced
\n20 leaves of fresh mint, thinly sliced
\nJuice of 2 lemons
\n2 tablespoons extra virgin olive oil
\n60g sliced almonds, lightly toasted (place on a tray in a medium oven for couple of minutes to toast)
\n1 medium red chilli finely chopped, seeds removed<\/p>\n

Method<\/strong>
\nSimmer the farro in unsalted water for about 20-25 minutes or until the farro is just cooked.
\nDrain and allow to cool.
\nOnce cooled, add the farro to a large bowl with all of the other ingredients and mix together. Season with salt and freshly ground black pepper, transfer to a serving bowl and serve.<\/p>\n
