Did anyone mention Cinnamon Scrolls? If they did, I’m there. Party, birthday, bbq, family dinner I’m in. I just love these suckers and thankfully I (and you) can now make them at home thanks to Relishes, Wanaka. They have come to the party BIG TIME with these bad boys and as I look out of the window at the falling snow, I know what is the perfect activity to be doing. Cooking!
Relishes have always been a favourite of mine, especially around Challenge Wanaka time as they have massive table where you and everybody’s uncle can fit and eat eat eat.
Dough
1 cup milk
90gm butter
3.5 cups flour
1/2 cup sugar
1 eggs
2.5 tsp yeast
1 tsp saltCream the butter, sugar, salt and yeast until smooth add egg and whisk.
Then add one cup of the flour and blend, then one cup of milk then blend. When smooth add remaining flour and then knead the dough for about 10 mins
Filling
175 gms brown sugar
120 gm soft butter
2 tsp cinnamon
Cream ingredients until smooth.
Divide dough evenly and roll out into a long rectangle. Spread with filling and roll up from the short end, put logs in freezer to firm up a bit so they don’t squish down when you cut into them. When firm cut into rolls, it should make at least 10 or more rolls. You can freeze them and pull them out when you fancy!
Icing
150gm soft cream cheese
1 cups sifted icing sugar
120gm soft butter
½ tsp vanilla essence
Cream ingredients together until smooth
Let prove, covered until doubled in size in a warm room or if frozen prove overnight covered at room temp.
Bake at 190º for about 12 mins or until lightly browned
Ice while warm
