To describe something amazingly wonderful. Usually Madam Woo’s food.

Onto the food. Madam Woo has only recently arrived on the fair shores of Queenstown but has taken the place by storm. Described as Chinese and Malay style street food, they serve up delicious dishes to share (I didn’t want to and got upset). Josh Emett and Fleur Caulton have done it again. Thank you chaps.

Here we have their favourite salad

Lychee salad (Make 4)

1 iceberg lettuce, broken into pieces
1packet red radishes, thinly sliced
1/2 tin lychees, quartered
50g cucumber, cut into strips
20g mint leaves
15g coriander leaves
100g roasted peanut, crushed

1. Mix all the ingredients together in a large bowl. Season with palm sugar dressing then check seasoning.
2.Serve in four individual bowls.

Palm sugar dressing

200g palm sugar, shaved
80ml apple cider vinegar
75ml water
30ml lime juice

1. Dissolve palm sugar in apple cider vinegar and water.
2. Mix well, then add lime juice before serving.

A change to winter stodge and is perfect as a light accompaniment to meat or poultry.
